Rosso delle Padule has a story of fights and warriors, but also of reclamation works and the discovery of precious treasures: like the STRAW WINE IN DRYING GRAPES, our new wine.

Limpid with an intense red colour with violet reflections, it is a soft and harmonious wine with a sweetly fruity taste with hints of red fruits mixed with toasted spices, well blended in a soft and persistent structure.

TYPE OF GRAPE
Blend of autochthon Apulian vines.

 

 

WINE REFINING
After a soft destemming, grape skins and the must are left to macerate for 4 days long (4-5° C). Alcoholic fermentation starts at a controlled temperature (28-30°C) for the first 2 days of fermentation; then the temperature is brought back to 22-24° C until the end of fermentation. This is followed by pressing and malolactic fermentation.


APPEARANCE AND TASTE
Intense red color with hints of violet, the “appassimento”(straw wine of grapes drying) is a soft and harmonious wine with a sweetly fruity taste with hints of red fruits and toasted spices, well blended in a persistent structure.


WINE-PAIRING
It pairs with roasted red meat, main courses and cheeses.


TO SERVE: 18- 20° C. It must be decanted before being drunk.

ORIGIN OF THE NAME

Do you know why “Rosso delle Padule” tells of battles and warriors and reclamation and the finding of precious treasures?


The name pays homage to the 'Palude del Capitano' (Captain's Marsh), part of the Porto Selvaggio Regional Natural Park: legend has it that a seafaring man, -a Captain-, settled in this marine area near Porto Cesareo looking for calm and serenity.


In the middle of a stretch of water jagged with 'doline di crollo', - karst rocks that the locals call 'spannulate' -, he built a small house and settled here.


This house (which can still be visited!) is located in front of a small body of water: a small lake fed by fresh water, -coming from the cold springs that gush out of the rock-, and salty water, -coming from small underground channels that from the sea not far away join up to the small 'marsh'.


In this fascinating area, the Captain would relax, perhaps sipping a good wine, a precious treasure: could it be that our 'Rosso delle Padule' was the wine that this Captain drank in his moments of reflection?

 

Straw wine of grapes drying techinque

Straw wine of grapes drying is a very ancient practice used to preserve both the fruit and, later, the wine for longer, by virtue of a greater concentration of sugars and aromas.


Indeed, through the slow evaporation of the water in the berries, the juices are concentrated and the grapes achieve a higher sugar and extract content.


To produce sweet raisin wines, Straw wine of grapes drying can be:


- in the vineyard (over-ripening of the grapes, the harvest of which is delayed for a variable time of 10-30 days. The resulting wines are indicated on the label as late harvests)
- natural (the grapes are left to dry naturally in the air)
- forced (special temperature-controlled rooms with forced ventilation).


For our 'Rosso delle Padule' the straw wine of grapes drying: it is carried out on the plant; fruiting head is cut and sap does not reach the bunch; then, the sun of Southern Italy dries the grapes to the right concentration.
